Sweet chilli chicken stir-fry |

Serves 4Ingredients:- 250g dried egg noodles
- 2 cups chicken stock
- 1 tbsp oil
- 4 chicken fillets, cut into strips
- 1 onion, sliced
- 1 clove of garlic, sliced
- 3 carrots, julienne
- 1 green pepper, sliced
- 3 tbsp sweet chilli sauce
- 2 tbsp soy sauce

Method:- Cook noodles in chicken stock for about six minutes or as per packing directions.
- Drain and set aside.
- Heat oil in a wok and stir-fry chicken for three to four minutes, until cooked. Remove with a slotted spoon and set aside.
- Add onions to the wok and cook for one minute. Add carrots and green pepper and cook for about three minutes.
- Add chicken and noodles to the wok and toss well to combine.
- Add sweet chilli sauce and soy sauce and stir through.
- Serve immediately.
