Bacon, Onion and Potato Bake |

Serves 4
Ingredients:- 800g potatoes, peeled
- 250g bacon, chopped
- 2 onions, diced
- 30g butter
- 2 tbsp sunflower oil
- Salt and pepper
- Thyme for garnish (optional)

Method:- Preheat oven to 180ºC.
- Heat half the butter and oil in a frying pan and gently sauté the onions until transparent. Remove and place in a bowl.
- Add the chopped up bacon bits to the same pan and lightly fry until almost cooked.
- Thinly slice the potatoes and arrange in layers in a greased oven pan or cake tin. Between each layer of potatoes, scatter over onion and bacon. Repeat until the pan is filled.
- Cover pan or tin and cook for 20 minutes until the potatoes are soft.
- Uncover and bake for another 30 minutes until the potatoes are cooked through and the top is golden brown.
- Remove from the oven and garnish with thyme (optional). Serve hot.
